Nutella Swirl Brownies

No, this is not a sponsored post. It just so happens that I love Nutella. Come to think of it, it’s sort of my kryptonite. In fact, I have a Nutella defense system when I go grocery shopping: first, I reason with myself not to buy another jar and if reasoning is not enough, I will convince myself to buy the smaller jar; then, when I get home, I store it in the cupboard, because if I leave it in plain sight, I know I won’t be able to resist including it ever so often in the breakfast routine or as a snack.
My favourite way of having Nutella is spread on a generous slice of salted and crunchy bread; my second favourite way is slathered on toasted pain de mie with banana slices. And for the ultimate delight, I love it in a crêpe, topped with toasted walnuts. What I end up doing with it however, is to spread it on apple rounds and scatter some raisins on top for a sweet breakfast.
For a while now, I’ve wanted to bake with Nutella and this is how I ended up making these brownies. And let me just say, they are delicious. Also, they’re quite easy to whip up and they make for a delectable and sweet treat.
Nutella Swirl Brownies
113gr/1/2 cup unsalted butter
85gr/3oz dark chocolate chips (min 60% cocoa)
150gr/3/4 cup coconut sugar or lightly packed brown sugar
1 tsp pure vanilla extract
2 large eggs, at room temperature
60gr/1/2 cup all purpose flour
150gr/1/2 cup Nutella
Preheat oven to 180C/350F. Grease and line the bottom of a 20cm/8in square pan. In a small saucepan, melt the butter and chocolate over low heat, stirring occasionally. When the chocolate and the butter have melted, remove the saucepan from the heat. In the bowl of your stand mixer or in a regular bowl, put the sugar and the vanilla. Add the chocolate and butter mixture and mix on low. Add the eggs one at a time and beat well after each addition, until well combined. Stir in the flour and mix until smooth, preferably by hand, with a spatula. Put the Nutella in a bowl set over a pan of simmering water and stir just until it becomes a little bit smoother. You could also microwave it for 25 seconds. Drop ribbons of Nutella on the brownie batter and swirl with a knife. Pour everything in the pan and bake for about 20 minutes. The brownies should be fudgy in the center. Enjoy!
